Advice On Making A Family- Friendly Omelet Dinner

Children aren't known for their healthy eating habits, and the endless chorus of moans that greet a balanced meal are enough to inspire the most dedicated parent to reach for the pizza delivery number.
One quick and simple solution is an omelet dinner. A wide choice of fillings creates variety and sense of control for the child, while fulfilling any number of nutritional goals for the parents.
Early preparation is the key to creating a quick stream-lined process that invites everyone's participation.
Fillings
Organize your fillings and pre-cook as necessary before announcing the dinner plans. Great fillings to use include stir-fry vegetables, peppers, tomatoes, onions, cubed potatoes, mushrooms, ham, and of course the popular, but not so healthy, bacon and sausage. Use your imagination. Almost any left-over meat or vegetable would make a great addition.
Egg Mixture
Next, prepare the egg mixture. For my family of six, I generally scramble a dozen eggs in a large mixing bowl. Variations include using a proportion of egg whites only, extending the mixture with added milk, or using a liquid egg product.
Cooking
Now it's time to call in the troops. Provide the children with small bowls and encourage them to choose as many fillings as they like for their own omelet. This will lead to great discussions and often some competition for the most unusual combination.
As everyone is making his choices, prepare for cooking by coating an 8 inch skillet with oil or cooking spray over low-medium heat. Pour about 1/4 cup of the egg mixture into the pan, and then quickly add the chosen toppings.
When the bottom is just set, flip the entire piece over to cook the top.
Sprinkle on cheese if desired, and fold in half for the classic omelet shape.
Slide onto a plate and serve with fruit and milk for a healthy child-happy meal.
