Advice On Making An Enchilada Casserole

Enchilada casserole is a very simple way of making enchiladas. It is an excellent dish to make when you're a working mom who is so tired from a long days work, but you want a decent meal that is going to take little time to make and is simple. This is also great for stay at home moms like myself when you are trying to get supper done and still make sure the kids are not destroying the house.
To start first you need to dice up a red bell pepper, half of an onion, 2 cloves of garlic, and 1 ½ tsps. of cilantro. Now put all of this to the side in a bowl for later. Now brown 2 ½ lbs. of ground beef, turkey, or pork if you like. After the meat has completely browned go ahead and add the mixture of ingredients that you put to the side earlier in a bowl. Let this start to cook. When the onion is translucent, go ahead and take the meat mixture off the stove. Add a packet of enchilada seasoning and 8 oz of water and mix together.
Now to start layering the casserole. You are going to open up a 14 oz can of enchilada sauce and pour into a pot and warm up. After the sauce is warm, you are going to dip the yellow or white corn tortillas into the sauce and then layer the bottom of your 13x9 baking dish with 6 tortillas. I prefer white corn tortillas instead of yellow because they tend to hold up better to the sauce while dipping them. After you have lined the first six tortillas up, spread half of your meat mixture on top of them. Cover your meat mixture with a layer of shredded cheese. The next step is layer another six dipped tortillas on top of the cheese. Then layer the meat followed by the cheese again. After this you will then layer it with the finally six dipped corn tortillas. With the remaining enchilada sauce that you have, pour it over the entire top of the casserole. Now sprinkle the rest of your cheese on top and stick into a 350 degree oven for about 35-40 minutes.
When it comes out, the cheese and sauce will be bubbling. I promise that after you try this recipe for enchilada casserole you will never go back to regular enchiladas again because they are so good.
